First cook at home on the new smoker. About 9 years ago, smoking chickens in the backyard with @tarinalex in Washington was what originally got me into barbecue and cooking. We were just doing simple stuff on the most basic electric smoker back then, but I was hooked. I didn't know any better then anyways. It was a difficult time in my life, and smoking meat in the backyard was therapeutic for me. I had no idea it would eventually lead to cooking on multiple 1000 gallon smokers for one of the best spots in the nation with Little Miss, having the opportunity to pull Wayne Mueller's briskets in Chicago, or to now having a custom rig like this in the backyard! It's amazing to look back and see all the details that led me to where I am now. So I decided to honor my roots and keep it simple with some smoked chicken. Made some salsa and tortillas to go with it. I am so blessed. *Yoka Bruschetta* These guys have been something that I've been cooking for years now but recently I decided to fill in the last piece of what they were missing..... smoke. They are sauteed onions and tomatoes with grilled skirt steak on top of a grilled baguette. Then they get topped with a smoked gorgonzola cream sauce to finish them off. The more I cook pastrami the more it becomes what may be my perfect bbq meat and one of my favorite things to smoke. • Here’s what pastrami is. It’s brisket that had been cured in a wet brine then smoked. • I like to wet brine/cure for around 10 days then it gets cooked like any other brisket except the rub is a little different. • My rub is 50/50 by volume 16 mesh black pepper and coriander. Then smoke like a full picker brisket. Ahhhhh, a perfectly cooked brisket. • Let’s talk about bark. • Bark is what forms on the outside of the brisket or any meat that’s smoked for a long time. It’s the black exterior of a cooked brisket that the keyboard Instagram warriors like to pop in and tell you is a burned and overcooked piece of meat. • Bark is formed from an extended period of the spices on the outside of the meat being in contact with smoke. • There is no burnt or charred taste at all. For best results, we recommend “prime” or “choice” grade of rib roast. Ask your butcher to cut the ribs and tie them on. Do not use a net (seasoning will pull off when your remove net after cooking ). . Step 2 – Prepare: One hour prior to cooking, remove the roast from the refrigerator and place in roasting pan. Pour seasoning packaging in small bowl and stir well. One package covers up to 15 pounds of prime rib. For roasts less than five pounds, only use a portion of the seasoning or roast will be too salty! Make sure to top the roast with a little extra seasoning! Place roast fatty side up, ribs down. The easiest large protein to cook and the best place to start when learning bbq. Three tips for pork butts: • 1. Buy bone in! They cook more evenly, wrap easier and don’t have spots to get rub stuck that won’t see smoke. • 2. LEAVE THE FAT CAP ON. I like to score the fat cap but I always leave it on. Scoring it helps it shred it into the meat evenly. • 3. Personally I always wrap in foil but for a beginner it’s the best place to start. Smoke until internal temp is in the 160 degree range and when the rub has turned very dark wrap in a couple pieces of heavy duty foil. Wrap it tight and make sure there isn’t a bunch of air in the foil then go back in the pit. Pull off smoker at 200-205 internal temp. Ever struggle to get your ribs to look like this? I’ll tell you how I do it ⬇️ • Over the years getting a good “bark” or exterior finish on ribs has always been a struggle of mine, and I’ve found wrapping in foil early in the cook makes it hard to gain that bark. • TRY THIS: take the ribs all the way to the end of the cook with no wrap. Be careful about pit temp or you’ll get burned ribs🤢. Shoot for 225-250 on a smaller pit and 250-275 on a larger pit. The ribs will be done when they will freely bend in half and the bark and exterior starts to almost “crack”. Once you get here add a 1/8 cup of liquid to some foil and wrap the rib up tight. Let it rest for 20-30 minutes in the foil and you will have a nice tender rib with a great bark. For liquid I like a 50/50 bbq sauce and apple cider vinegar mixture with a splash of hot sauce. • What’s your best rib tip?

INGREDIENTS: 2 Tablespoons Extra-Virgin Olive Oil 1 Tablespoon My Family’s seafood Seasoning 1 lb. Large Shrimp Juice and Zest From 1 Lemon For Spicy Lovers, Add 1/4 Tsp Crushed Red Peppers . DIRECTIONS: In a large bowl, combine shrimp, one tablespoon olive oil, one tablespoon seasoning, and half of the lemon zest. Preheat grill or striped pan over medium-high heat. Place shrimps and cook, turning once, until cooked through, about one minute per side. Transfer shrimp to a serving platter and drizzle with remaining olive oil and lemon juice. Sprinkle with remaining one-half teaspoon of seasoning (if desired ). For best results, we recommend “prime” or “choice” grade of rib roast. Ask your butcher to cut the ribs and tie them on. Do not use a net (seasoning will pull off when your remove net after cooking ). . Step 2 – Prepare: One hour prior to cooking, remove the roast from the refrigerator and place in roasting pan. Pour seasoning packaging in small bowl and stir well. One package covers up to 15 pounds of prime rib. For roasts less than five pounds, only use a portion of the seasoning or roast will be too salty! Make sure to top the roast with a little extra seasoning! Place roast fatty side up, ribs down. Cover and set aside for 30 minutes or so. Preheat oven to 325 degrees. . Step 3 – Cook: Place uncovered roasting pan on center rack in oven. Cook approximately 14 to 17 minutes per pound for rare, depending on the size of the roast. remember, a prime rib roast must rest, under a loose covering of aluminum foil, between 15 and 30 minutes after you remove it from the oven. This allows the juices to seep in and the flavors to continue to blend. The roast will gain as much as 20 degrees while resting depending on the cooking temperature, size of the roast, and the length of its rest. Check center of roast for desired doneness using a meat thermometer. End cuts will be more done than center.. We like ours rare. We cook a 12 lb. prime rib for 15 to 17 minutes per/lb. bringing internal temperature to 120 degrees. For our family, this is perfect.
