What’s your favorite way to cook tri-tip? I love reverse sear, but decided to give the regular sear method a try. Rubbed the tri-tip with Santa Maria seasoning and then seared it on my kettle grill over some coals and California red oak chips for a couple of minutes on each side. Had the coals on one side and moved the tri-tip to the other side to cook indirectly until internal temp reached in the 130s. Let rest 20 minutes before slicing. Wrapped top with foil and put on grill at 275F indirect heat for an hour. Removed foil on top and cooked uncovered for 45 minutes. Removed and let sit for 15 minutes for sauce to thicken. Helped myself to some center cut ribeye steaks over the weekend. Went traditional sear again and once steaks got up to internal temps around 135, I rested with @chefshamy garlic butter on top. Seasoned before the cook with some salt and pepper based rub. Love the flavor on these steaks! Cooked up a whole chicken on the @campchef the other day and it was amazing! The char on the skin had me bummed at first, but it made the skin crispy and had good flavor. Also, the meat itself was so flavorful. So...win! Anyone plan on grilling shrimp this weekend? These wild Argentinian shrimp from @omahasteaks are large in size and have a sweeter taste to them. Slicing up this juicy tri-tip I cooked on my kettle grill. Seasoned with Santa Maria seasoning and cooked over hot coals with California red oak chips. I went against my traditional ways of reverse searing and opted for the traditional sear, which is searing first and indirect heat until the meat reaches the desired temp. I went to 140 on these for a medium rare temp. I was impressed with how tender and juicy it was, but wish I had that hint of smoke flavor. With that said, I was still impressed. 🔥🔥 . . Smoked a brisket on my drum smoker recently. Truth be told, it’s my first time smoking brisket this way. I used a blend of lump coal and briquettes, with hickory wood chunks for that smoke flavor...and aroma. Smoked at 250 degrees and wrapped in foil when internal meat temp reached the 160s. Kept on until internal temp reached 200. Removed, rested for an hour, and sliced. Had some great smoke flavor to it off the drum. Remember the smoked salmon I posted about last week? Here’s a quick rundown of the process: First, I created a brine using water, soy sauce, kosher salt, brown sugar, minced garlic, onion powder, and ground ginger. . . Next, I put the @bluehousesalmon fillets in the brine and refrigerated overnight. . . After that, I took the salmon out of the brine, rinsed off, and put on cooling racks to air out in the fridge for five hours and form a pellicle (protein layer ) on top. . . Then I got the grill heated up to 175 degrees with pecan wood and indirect heat. I placed the salmon fillets on the grill and once an hour I brushed one with maple syrup and the other with honey. Reverse seared some Private Reserve Strip Steaks from @omahasteaks by giving them some hickory smoke at 225 degrees for about 45 minutes before hitting them with the cast iron sear with avocado oil, rosemary, and garlic. Steve’s smoking adventure #25 : Pulled Pork v3.0! This time, Steve only used salt, pepper & brown sugar as the rub...smoked it for 5 hours, wrapped it and cooked it for another 2 hours! After resting for 45 mins, the pulled pork was super tender...as u can see in the video...Steve barely need any force to pull the meat apart!!
