They're a complex carbohydrate, low glycaemic, high in soluble and insoluble fibre and resistant starch.⁠ Resistant starch resists digestion in the small intestine. Once it reaches the large intestine, it is broken down by bacteria and produces short chain fatty acids maintaining the health of your colonic cells.⁠ Black beans are also a good source of prebiotics which is essentially like a fertilizer feeding the good bacteria in our gut.⁠ ⁠ Cauliflower is a great source of nutrients. It's a cruciferous vegetable which help support the detoxification pathways of the liver.⁠ ⁠ 🌱 1/4 Cauliflower cut into florets⁠ 🌿 1/8 tsp cummin⁠ 🌶️ 1/4 tsp chilli (divided )⁠ 🌿 1/4 tsp smoked paprika (divided )⁠ 🍪 1/4 tsp sea salt or Himalayan salt⁠ 🌱 1/3 C black beans (cooked / tin )⁠ 💧 2 Tbs water⁠ 🥑 1/4 avocado⁠ 🌱 clove garlic (divided )⁠ 🍋 1/4 tsp lime juice⁠ 🌿 1 Tbs coriander ⁠ 🛢️ 1 T olive or avocado oil⁠ ⁠ Preheat oven 220 Celsius⁠ Toss cauliflower with cumin, half chilli powder, half smoked paprika, half salt and half the oil. Place in oven and cook for 25 mins turning half way.⁠ ⁠ While cauliflower is baking, add olive oil and half the garlic to a small pot and heat. Add the beans, water, remaining chilli powder, smoked paprika and salt. Bring to a simmer over med-low heat, mashing beans with back of a spoon. Cook for about 8-10 mins until mixture has thickened. remove from heat.⁠ ⁠ In a small bowl, add the avocado, remaining garlic and lime juice. Moroccan meatball tagine with lemon & olives. This is a new favorite of ours & inspired by good food magazine 🙏🏻 Ingredients 2 onions , peeled 500g minced lamb zest and juice 1 unwaxed organic lemon 1 tsp ground cumin 1 tsp ground cinnamon pinch cayenne pepper small bunch flat-leaf parsley chopped (optional ) 2 tbsp olive oil thumb-sized piece ginger , peeled and grated 1 red chilli deseeded and finely chopped pinch saffron strands 250ml lamb stock 1 tbsp tomato purée 100g pitted black kalamata olive small bunch coriander chopped (optional ) couscous/bulgur or fresh crusty bread to serve with Method • Put the onions in a food processor and blitz until finely chopped. Put the lamb, lemon zest, spices, parsley and half the onions in a large bowl, and season. Using your hands, mix until well combined, then shape into walnut-sized balls. • Heat the oil in a large flameproof dish, or tagine with a lid, then add the remaining onions, ginger, chilli and saffron. Cook for 5 mins until the onion is softened and starting to colour. Add the lemon juice, stock, tomato purée and olives, then bring to the boil. Add the meatballs, one at a time, then reduce the heat, cover with the lid and cook for 20 mins, turning the meatballs a couple of times. • Remove lid, then add the coriander. Cook, uncovered, for a further 10 mins until the liquid has reduced and thickened slightly.

Plate 1 👉🏻 Thinly sliced chicken breast seasoned with salt, pepper, garlic, Italian seasoning & lemon. baked at 400° for 20-25 with two slices of lemon on the bottom + white rice +t 3 tbs parm+ 1 tbsp go grass fed butter + chicken broth and stir until creamy + sautéed 1 head of broccoli & 1/2 small onion. mixed together with rice then added juice of 1/2 lemon. . Plate 2 👉🏻 Sautéed zucchini, onion & corn in olive oil, salt, pepper & garlic + parm rice: two servings white rice but sub chicken broth for water. once cooked, add salt, pepper, 2 tbs grass fed butter, 2 tbs parm & juice of half a lemon. . Plate 3 👉🏻 Brown rice pasta + sautéed zoodles & tomatoes in olive oil, salt, pepper & garlic + once veggies and noodles are cooked, toss all together with a splash of bone or veggie broth, butter, smoked paprika, crushed red pepper flakes, parsley & parmesan cheese. . Wishing everyone a great new week ☺️ I’ll be spending most of mine doing uni work as usual 😅 Potato curry with green lentils and broccolini 1 medium onion, chopped 2 cloves garlic, minced 1 red bell pepper, diced 2 tbsp tomato paste 4 cups potatoes, cubed 1 can coconut milk 1 can chopped tomatoes 1/2 cup water 1 tbsp curry powder 2 tsp garam masala 1 tsp cumin 1 tsp turmeric 1/2 tsp paprika 2 cups broccolini, chopped 1 can green lentils, drained and rinsed Salt to taste Sauté the onion, garlic and bell pepper for 2 minutes in either water or oil, then add the tomato paste and cook for a further 2 minutes. Now add the potatoes, coconut milk, chopped tomatoes, water, curry powder, garam masala, cumin, turmeric and paprika. Cook for 15 minutes, until the potatoes start to soften. Next add the broccolini and lentils, and simmer for a further 10-15 minutes, until the potatoes are fully softened. Fall weather is officially here in Richmond so bring on all the cozy, comforting recipes like this MINESTRONE SOUP! 💃🏻🍲 It’s so delicious and is jam-packed with veggies, beans and lots of Italian flavor. 💯 Traditional minestrone typically has pasta, but for this version I decided to use chopped potatoes instead of pasta. That said, you can totally make this soup heartier by adding in cooked rice or pasta before serving. It’s made completely in the slow cooker and only requires about 15 minutes of prep work chopping the veggies. It’s such a great recipe to make over the weekend because you’ll have leftovers for days! EASY OVEN BAKED SPICY CHICKEN TACOS Chicken Tacos are the perfect EASY weeknight dinner. These have lots of flavor and none of the stress. By @thecookierookie 1 tablespoon olive oil 1/2 pound cooked chicken, shredded 1 (1 ounce ) Hot & Spicy Taco Seasoning 1/2 cup onion, diced 1 (14.5 ounce ) can diced tomato, drained 1 (4.5 ounce ) can Chopped Green Chiles 10 stand and stuff Taco Shells 1/2 (16 ounce ) can Refried Beans 2 cups Mexican Blend Cheese, shredded Toppings such as sliced Jalapenos, sour cream, salsa, chopped cilantro, shredded lettuce, or any of your favorite taco toppings! Preheat oven to 400F. Spray a 9x13 baking dish with nonstick spray and set aside. Heat olive oil over medium heat in a medium skillet. Add onion to skillet and cook for 2-3 minutes, or until the onion is translucent and fragrant. Stir in the chicken, taco seasoning, tomatoes, and green chiles. Stir to combine fully. Reduce to simmer and allow to cook for 5-8 minutes. Place the taco shells in the baking dish, standing up. I was able to fit 10 taco shells in the dish by adding 2 on each side. Spoon 1 tablespoon of beans into the bottom of each taco shell. Top with the chicken mixture, almost to the top of each shell. Sprinkle each shell generously with shredded cheese, the more the better! Bake for 12-14 minutes or until cheese is fully melted and the edges of the shells are browned. Remove from the oven and top with your favorite items such as jalapenos, sour cream, cilantro, and salsa.
