FRAGRANT MOROCCAN CHICKEN AND QUINOA BOWL WITH AVO AND ASPARAGUS. Now is definitely the season for rich, warming, fragrant flavours in your meals, and this one will not disappoint! RECIPE FOR THE CHICKEN (FOR 2 ): 1. Dice 2 large chicken breasts into bite-sized chunks 2. Place chunks in a large bowl and add the juice of a whole lemon, a couple sprigs of saffron, a teaspoon of paprika, a teaspoon of fresh grated ginger and a dash of hot chilli powder. 3. Marinate in the fridge for at least an hour (ideally overnight! ) 4. Pan-sear the chunks on a high heat with a teaspoon of coconut oil for about 12 minutes, being careful to keep stirring so the chunks cook evenly and cook through. 5. Being a human as a coach rather than a dictator - Clients have emotions, competitive athletes can feel stressed, exhausted and very pressured throughout the year. - When one of my clients said to me that their day was a bad one, with their head up their arse, they were demotivated and having a sad....
