We had guests at dinner yesterday - felt like cooking something new. Never cooked roasted pork belly before, tried and it and went quite well, we had it with home made apple sauce, sweet potato purée, wild mushrooms and vegetables. I loved it, will definitely cook it again. 1. Seasoned belly slices, put some olive oil, let them marinate overnight; added a pint of chicken stock, covered with foil, baked for 1 hour on 170 C; removed the foil and baked for another hour. Served with Ottolenghi’s crushed courgette, fried broccoli and kale with garlic, cumin and lime; sweet potato, celeriac, onion, coconut milk purée. 2. Первый раз готовила свиное брюшко, очень вкусно получилось с яблочным соусом, пюре из сладкой картошки, корня сельдерея, лука и кокосовых сливок (жирная часть кокосового молока из банки ). Приготовила ещё несколько гарниров Оттоленги - помятый кабачок с мятой, тимьяном, лаймом и оливковым маслом; жареные брокколи с кейлом и чесноком; грибочки, жаренные с луком. Удачное сочетание блюд т к почти все можно приготовить заранее и держать в духовке до прихода гостей. Свинину замариновала накануне (розмарин, шалфей, кориандр, морская соль, оливковое масло ). На другой день залила 500 мл куриного бульона и тушила 1 час, под фольгой и почти 1 час без фольги (зависит от размера и кол-ва кусочков ). Яблочный соус из зеленых яблочек с тёртым имбирем и мёдом. Ever since my boys were little, I have involved them in family food prep. Great for toddler dexterity and special Mom time. Now as teenagers, it’s an activity buffered space to connect. Sweet tooth Saturday! This one is for all of my keto peeps. Ever since cycling off keto, a lot of my treats are more heavier in the carbs or not keto friendly. I still love my keto peeps, shoot I might join you all again in the New year maybe 🤔. I found this recipe via @wholesomeyum she has some amazing ones that anyone who is on low carb or Keto can find. I did make some modifications because I don’t have any of her brand products. They still turned out wonderful. Read directions first before beginning. Keto, Paleo, GF Chocolate Chip Cookies. ( for vegans sub out butter for coconut oil and use vegan chocolate chips ) Ingredients: 90g Kerrygold Butter Softened take it out and leave it a room temp for an hour prior. 96g Swerve 1 large egg 1 tsp vanilla extract 280g Almond flour 1/2 tsp Xantham Gum 90g Lily’s Milk Chocolate Baking Chips Directions: You are going to need a hand mixer or kitchen aid. Preheat oven at 350°. Mix the butter and the swerve together. The add egg, vanilla, mix. Then half a cup at a time add your almond flour. DO NOT ADD THE ENTIRE 280g at once. The batter will be too hard to manage. Then sprinkle the xantham gum all over mixture and mix again. Fold in the chocolate chips. Use 1tbs cookie scooper and scoop into cookie sheet that has been lined with parchment paper. Flatten each cookie to desire thickness. These cookies will not rise and fall like regular chocolate chip cookies. Makes 21 cookies. Bake for 12-15 min let them cool. Macros per cookie: Calories 131 P 3g C 7g F 12g. #sweettoothsaturday #keto #paleo #glutenfree

Best dinner I’ve made all week you ask? This! CREAMY ALFREDO SPAGHETTI SQUASH + BAKED LEMON PEPPER CHICKEN and cheesy broccoli 😍👌🏼 Keeping this short since Im working ER senior nights again tonight. Stay safe everyone ❤️ Slice spaghetti squash in half. Drizzle @primalkitchenfoods avocado or olive oil + salt on each half. Bake at 400 for about 1 hour or until fork tender. Cool, then run a fork through the squash to loosen spaghetti strands. I added @primalkitchenfoods Alfredo sauce + parm and pepper! My new favorite way to roast a butternut squash!! Rosemary, sage, ghee, and salt is ALL you need 😍 Save this one for a healthy thanksgiving dish! • Slice off the squash ends, and peel off the skin with a vegetable peeler. Cut the squash in half, scoop out the seeds, and slice the squash without cutting all the way through. • Preheat your oven to 400. Lather the whole squash with ghee (1-2 Tbs. ), and chop 2 sprigs each of rosemary and sage. Sprinkle 1/2 tsp. Sea salt and the herbs over the squash. Roast for 1-1.5 hours, checking after 1 hour to see if it’s done.
